yummy soup

Tonight I made (relatively) homemade carrot ginger soup.
I was reading about carrot soup in
velvetpage's journal, and it made me want to try some. I modified a recipe a friend had given me for 'creamy' soup...the thickening is provided by potatoes, and the carrots and potatoes are cooked in broth (I cheated here and used canned veggie broth) until they're soft and then blended. I cut up ginger and threw some in the blender as well, then added a little more to taste. Spices (in addition to ginger) were nutmeg, paprika and a little bit of white pepper. I didn't end up needing to salt it more as the canned broth was salty enough.
It was so good! Yum!!! I'm starting to feel more confident as a cook. It's becoming fun.
Ellie liked it okay. Daniel didn't like it at all, so I made him some Campbell's, which was kind of funny. No accounting for taste I suppose...and more left over for me!
